A cult establishment on the French Riviera since 1975, the Chez Jo restaurant welcomes you on a wooden pontoon above crystal clear water on Layet beach in Lavandou. Reservations strongly recommended, you can taste the house specialties: bouillabaisse (on order) cooked in a wood oven as well as the catch of the day of grilled fish or lobsters. Facing the Mediterranean Sea, watch the boats coming from Saint-Tropez drop anchor and the restaurant's boat bringing passengers onto the sand. Unique experience & escape guaranteed in this dream setting.
But in the meantime, the restaurant at Jo Le Layet is giving us an exclusive recipe, which is not on the menu, octopus salad with Lavandou flavors.

Lavandou octopus salad by Le Layet – Chez Jo:

Ingredients:

  • 1 octopus (approximately 1 kg)
  • 1 to 2 red tomatoes and 2 yellow “pineapple” tomatoes
  • 1/2 peppers
  • 1/2 shallot (a little bit)
  • 5 sprigs of parsley
  • Olive oil
  • Lemon
  • Salt
  • Pepper

A little advice:

Freeze the octopus for 48 hours so that it is more tender afterwards

  • Clean the octopus well before cooking for around 40 minutes (cooking varies between 30 minutes and 2 hours depending on its size)

A little advice:

When the tip of the knife sinks into the flesh without forcing, the octopus is cooked (be careful not to let it cook too much so that it does not become too soft)

  • Let it cool and cut it into cubes
  • Cut the tomatoes & pepper into cubes
  • Finely slice the shallot
  • To mix everything
  • Before serving, season with a little olive oil and lemon, salt and pepper
  • Sprinkle with fresh parsley
