Anchovy recipe:
Anchoïade, a typically Provençal recipe, is made with anchovies, olive oil and garlic.
But everyone can add their own little ingredient.
It is eaten in two ways;
– you dip raw vegetables: celery sticks, carrot sticks, peppers, cucumber, fennel, radishes, endive leaves…in the achovy
– or you spread it on toast, slices of good toast, rubbed with garlic or not, depending on your taste.
Ingredients:
- 400 gr of Anchovies,
- 2 or 3 cloves of garlic,
- 2 free-range or organic egg yolks,
- 50 cl of olive oil,
- 1 tbsp balsamic vinegar.
Tapenade recipe:
Tapenade is a traditional recipe from Provençal cuisine. It is made from black or green olives, traditionally pounded in a mortar with olive oil, capers, anchovy fillets, garlic, and Provence herbs.
Ingredients:
- 500g black olives,
- 2 garlic cloves,
- herbs of Provence,
- olive oil
