Meeting with Nicolas du Beau Soleil

Nicolas, works with family in thehotel restaurant family Beautiful sun open from April to October in Le Lavandou.
The rest of the year, Nicolas is also bar teacher working in Phuket, or even New York Dublin, Majorca, Sydney…
Her favorite part of the job is being able to share his passion with the others. But he also enjoys teaching people who are eager to learn and master this profession.
And today we had the chance to meet him and he shared some cocktail recipes with us.

The “Gin Basil Smash”

Cocktail created in 2008 in Hamburg by a German bartender.

Recipe :
Gin 60 ml
Fresh squeezed lemon juice (yellow lemon) 30 ml
Sugar syrup 15 ml
Basil 8 to 12 leaves

Technical: shake and filter (In order to remove basil deposits that are not very pleasant to taste)
This cocktail can be served with or without ice, very chilled.

Decoration: A beautiful Basil leaf.

small tip

To make homemade sugar syrup, nothing could be simpler. All you need to do is bring 250g of sugar and 250g of water to the boil. Leave to cool and Hop! You get your sugar syrup.

“The Oily Mommy”

“It’s one of my creations, made during confinement” tells us Nicolas Podda of the Hôtel restaurant Beau-Soleil in Le Lavandou.

Recipe :
Egg white 15 to 20 ml (which is more or less the same as egg white)
Basil 8 to 12 leaves
Gin 50 ml
Fresh squeezed lemon juice (yellow lemon) 30 ml
Pepper syrup
1 bar of extra virgin olive oil.

Technical: Shake with ice cubes, filter (In order to remove the basil deposits that are not very pleasant to taste) and shake for a second without ice cubes (In order to break the proteins present in the egg white and create an emulsion, which will allow us to have a nice foam).

Decoration: Pepper, olive oil, basil head, eggshell.

small tip

To make a homemade pepper syrup, remember your basic sugar syrup: 250 gr of sugar and 250 gr of water bring to the boil. When it has cooled, add 35g of coarsely crushed pepper. Leave to macerate. And you have just made your pepper syrup!!

Be careful if you like pepper you can very well make a much spicier pepper syrup by increasing the quantity of pepper.

Little tip for the two cocktails and any other “shaker” cocktails for that matter; If you do not have a professional shaker, I am sure that you all have airtight jars such as jam jars or other protein shakers at home, etc.
